Brussels Sprout Chicken Caesar Salad

For supper on Tuesday I searched the Chatelaine website for another new recipe to try.  If you are looking for a magazine to subscribe to, Chatelaine is by far my favourite.  It never disappoints.  I saw this recipe and thought it sounded very interesting and I wanted to try it.  It was a beautiful day as well so we barbecued the chicken for the top of the salad.

The recipe was delicious.  I have never had Brussels sprouts raw and shredded before and it was a nice change from romaine lettuce. The dressing was fantastic, so delicious.  I used anchovy paste instead though since that is what I had on hand.

For lunch the next day I decided to try roasting the Brussels sprouts to make a warm caesar salad for lunch. I cut the Brussels sprouts in half and tossed them with a splash of olive oil, freshly squeezed lemon juice and some pepper.  I roasted them at 400F for 25-30 minutes.  I then tossed them with the remaining dressing from last night.  This salad was also delicious and if you are in the mood for a warm salad, I highly recommend this one.

Warm Chicken Wraps

I really like this recipe from The Looneyspoons Collection and it's a great recipe to use with leftover chicken.  I barbecued all my chicken on Tuesday night  so that I would have extra chicken leftover for supper tonight.  Having the chicken barbecued added great flavour to the wraps.
